Are you referring to the max cut depth at a single pass or how much can be machined in total before replacement is needed??

Many things should be considered before one considers an absolute minimum head thickness. What works for one shop, may not work for the next shop as there are many variables to consider.
Chrysler does not supply any information about thickness for this cylinder head. AERA has a reported measurement of 4.573" (116.154 MM) for a New Head. Minimal amounts of deck stock has been reported successful as long as the unworn cam bores are in 100% alignment. Possibly up to .010" may be removed.

Also you may look at head saver shims if available.
As Dave mentioned there is a minimal amount that can be removed but depending on how popular the engines are there may be a head saver shim that can be used to save the heads from replacement.
SBI sells them for lots of applications check the catalogue for your application and availability
